Thick Pork Cutlets with Apple and Ginger sauce
Method
SAUCE
3 Tbsp Brown Sugar
1/8 tsp Rasped Root Ginger
150 ml Cider
1 Cooking Apple – peeled/sliced
Place all ingredients in a pan and simmer until apple breaks down. Stir until even consistency.
PORK
Sear 4 Thick Pork Cutlets in pairs, then stand onto the bone. Place on middle shelf in 200 deg oven. After 1 hour, pour sauce over cutlets and return to oven for further 20mins. Baste the cutlets regularly to ensure they do not dry out.
Serve with Red Onion and Cabbage
Place 1 red onion finely sliced with quarter of finely sliced cabbage into a pot with lid, and boil with ½ cup of water for 5 mins. Drain off water. Add generous Tblsp of butter, salt and pepper, and saute on simmer plate for 5-10 mins with lid ajar to remove excess moisture
Can also serve with Roasted Onion and Sweet Potato/Kumara
